Lamb and Feta Burgers
- 1lb. ground lamb
- 1/2 cup feta cheese, crumbled finely
- 1/2 tbsp olive oil
- 3 tbsp shallot or red onion - finely chopped
- 1/2 tsp salt
- freshly ground pepper
- 2 tbsp finely chopped fresh flat-leaf parsley (or 2 tsp dried)
- 2 cloves garlic
- 2 eggs
Sautee shallot/onion in olive oil until clear add garlic and sauté for another minute.
Set aside.
Mix well: ground lamb, salt, pepper, eggs, sautéed shallot/onion and garlic
Add crumbled feta cheese.
Cook on preheated barbecue or stove top.
Remember lamb is best when not over cooked!
