Lamb and Feta Burgers

  • 1lb. ground lamb
  • 1/2 cup feta cheese, crumbled finely
  • 1/2 tbsp olive oil
  • 3 tbsp shallot or red onion - finely chopped
  • 1/2 tsp salt
  • freshly ground pepper
  • 2 tbsp finely chopped fresh flat-leaf parsley (or 2 tsp dried)
  • 2 cloves garlic
  • 2 eggs

Sautee shallot/onion in olive oil until clear add garlic and sauté for another minute.
Set aside.
Mix well: ground lamb, salt, pepper, eggs, sautéed shallot/onion and garlic
Add crumbled feta cheese.
Cook on preheated barbecue or stove top.
Remember lamb is best when not over cooked!
